    THIS PINK BOURBON LOT WAS SELECTED BECAUSE OF IT'S CLEAN RED APPLE SWEETNESS AND RAPSBERRY ACIDITY. A BEAUTIFUL EXPRESSION OF TERRIOR. 

    The producer, Francisco Becerra, owns and operates his farm in the often overlooked area of Suaza, Huila, with his wife and two children. 

    The Pink Bourbon cherries are first picked and stored for 12 hours, increasing pigment transfer. They are then depulped and fermented for 24-30 hours before being washed and then dried in a parabolic dryer for 3 weeks. This is the first time that Fjord has purchased a coffee that was mechanically dried, as opposed to sun dried on raised beds. 

    This lot was purchased through Osito, who co-own a coffee farm in the Suaza area and have made it a priority to find and promote local, quality producers. 

    All coffees come as whole beans.
