The Philosophy

It is our mission that we want you to enjoy a pure high quality coffee experience, that we educate about coffee and about its delicious tasting notes. Therefore we take a stand and don’t tamper your coffee with sugar. We have premium hand picked coffee beans which are carefully processed and roasted, the coffee itself tastes fruity and sweet and doesn't need any sugar. That way you can taste the coffees natural flavours.

No milk in filter coffee or ibrik: The pursuit of a high quality coffee experience is also the reason that we have decided to serve hand brewed coffee and ibrik only without milk, because it breaks our hearts when milk is added to a beautiful light roasted filter coffee and ruins all the aroma. Instead, we chose to highlight the tasting notes while serving it only pure as it is.

“No spoons”
Drinks with milk: the micro foam milk is well mixed with the creamy espresso so there is no need to stir with a spoon.
Drinks without milk: we use our unique hand made Ancap 8oz for serving espresso. Before we serve you espresso we make sure that there are no bubbles and we sway the espresso - so no need for spoons to break the crema. You can easily break it thanks to our special cup.

The resources of our staff are precious.
Therefore we chose to only accept card payment and let our team focus on a great coffee and customer service experience instead of cash handling. Through our no-cash-policy, we save a lot of time that we invest in communication with and service to our customers.

Tipping is often seen as a way to help staff in the hospitality industry and also in speciality coffee to top up their wage so they can make a living. It is our mission to promote healthy wages that our staff and generally the staff in the speciality coffee scene can build their lives with and support their families. We would like to see this become a movement across the industry so that one day, tipping would be unnecessary.

The general idea is to eliminate tipping, by paying the staff higher wages and pass on the cost to customers while raising menu prices. So the tip is now basically already included in the higher prices and allows us to pay the living wage. Tipping is also often linked to gender inequality or even sexism and racism: for example; a young blonde pretty waitress might receive more tips than her older male colleague with a different cultural background. We believe our coffee world is changing for the better. And paying a fair wage in coffee shops, eliminating tipping and bringing healthy food and beverage into the quick-serve genre are part of a larger reordering of the entire system.
