Eigentlich habe ich das neue „Ben Rahim“ ja wegen des „specialty coffee“ angesteuert. Ein paar Tage vor der Eröffnung hatte ich das „Opening Soon“-Schild an der Tür des kleinen Ladens hinten in den Hackeschen Höfen entdeckt und mir einen Vermerk auf meine immer länger werdende „muss ich besuchen“-Liste gemacht. Jetzt endlich hier: Ich war einkaufen, bin matt und ich habe Kaffeedurst. Speziellen Kaffeedurst. Der Betreiber Wissem Ben Rahim, zuvor Senior Barista im „The Barn“, davor in Australien tätig, rät mir aber freundlich zu Tee. Als Tunesier müsse er den in seinem eigenen Café natürlich auf der Karte haben, erklärt er mir lächelnd. Und er will zeigen, dass auch Tee „special“ sein kann. Bitte!
Tee in der Gastronomie: ein Trauerspiel! Im Großteil der Fälle schmeckt er scheiße oder bestenfalls belanglos. Kein Wunder, dass in kalten Monaten neuerdings überall lieber zu heißer frischer Ingwer-Minze-Irgendwas gegriffen wird. Tee ist eines der wenigen Getränke, das man, auch als Laie, mit etwas Muße zu Hause immer besser hinbekommt als das, was einem in der Gastronomie vorgesetzt wird. Welch seltsame Konstrukte werden da aufgebaut mit dem Hinweis, das müsse noch paar Minuten ziehen. Klapprige Aufbauten auf dem Glas, sackartige Gebilde, mit denen man am Ende verbrühte, nasse Finger hat, während man die entweder zu schwache oder zu starke Flüssigkeit in sich ergießt. Und dafür einen Deckungsbeitrag entrichtet, der… lassen wir´s. Gut, es gibt in Berlin das Tee zelebrierende „Paper and Tea“, mittlerweile zweimal, ist aber primär ein Shopkonzept. Es gibt das wunderschöne „Chen Ché“ in der Rosenthaler Straße, ein zwei weitere nette Ideen, spezielle Teehäuser, aber der Standard liegt tief drunter.
Hier macht man das etwas anders. Zubereitet wird der Tee vor meinen Augen auf dem Tresen im „Clever Dripper“, wie er für Third-Wave-Kaffee verwendet wird: Filter ausspülen, hinein die Blüten des „Rose Darjeeling“, einem Schwarztee, der mit gängigem Darjeeling wenig zu tun hat. Er ist nicht herb, dafür sehr floral, angenehm süßlich ohne jeden Zucker. Er duftet herrlich, das Liquid ist leicht grünlich-gelblich. Aber es ist eben kein Grün-, sondern ein Schwarztee. Verblüffend, blind verkostet würde man es kaum glauben. Der Effekt stellt sich fix ein: Ich bin wieder wach. Weil der Tee läuft nicht direkt in die gläserne Gästekanne (wie viel schöner als einfach nur ein Glas!) durchläuft, sondern erst, wenn das kleine Ventil geöffnet wird, kann die Zeit, in der Heißwasser und Blüten zusammen sind, genau bestimmt werden. In diesem Falle exakt 90 Sekunden. So wird das volle Aroma rausgezogen und die volle Kraft.
Sehr gut dazu passt das leckere, pistazig-nussig-knackige und nicht wie sonst so oft in Honig ersoffene Baklava-Kleingebäck, das eine befreundete tunesische Familie für Rahim anfertigt. Der seinen Gästen übrigens, weil er sogar die Heißwasserzufuhr in seinen Tresen integriert hat, so gut wie nie den Rücken zudrehen muss. „Ich will ja, dass die Leute sehen können, dass auch Teezubereitung spannend sein kann“, erklärt er.
Natürlich liegt der Fokus auf Kaffee, man hat exklusive Sorten von „Square Mile“ aus London, die zu Espresso, Long Black, Flat White und Mokka verarbeitet werden. Doch sich auch mal zu einem Spezialitäten-Tee überreden lassen – keine schlechte Idee.
